Practical demonstration of egg quality as an extension strategy for sanitary and food education: experience during the National Week of Science and Technology at UFRRJ

Abstract

University extension actions are relevant strategies for the popularization of scientific knowledge, as they promote closer interaction between universities and society through practical activities that stimulate active learning. This study aimed to analyze the potential of an extension activity based on practical demonstrations as a strategy for sanitary education focused on the evaluation of table egg quality. The activity was carried out during the 2025 National Week of Science and Technology at the Federal Rural University of Rio de Janeiro and consisted of an eight-hour practical course involving faculty members and undergraduate students, targeting students and members of the external community. The methodology included topics related to visual evaluation of egg quality, comparison between fresh and stored eggs, proper storage and hygienization practices, and clarification of common myths regarding egg consumption, using practical demonstrations and accessible language, supported by descriptive analysis of observational records. Approximately 50 participants took part in the activity, showing high levels of interaction and improved understanding of technical concepts, particularly regarding eggshell integrity, the effects of storage on internal quality, and the risks associated with inadequate hygienization practices. In addition, the activity contributed to the academic development of undergraduate students by fostering skills related to scientific communication and social responsibility. It is concluded that the extension activity demonstrated high potential as a strategy for sanitary and food education focused on the evaluation of table egg quality.
