Secagem e Extração de Taninos Totais da Hortelã (Mentha x vilosa Hudson)

Este trabalho objetivou avaliar o efeito da temperatura de secagem sobre o rendimento de taninos totais da Hortelã (Mentha x vilosa Hudson) bem como, identificar as condições mais adequadas para minimizar as perdas dos princípios ativos. A determinação quantitativa dos teores de taninos totais nos extratos deu-se através de reações de complexação e leitura em espectrofotômetro. Realizou-se experimentos de secagem de folhas em camada delgada utilizando secador convectivo nas temperaturas de 50º C, 60º C e 70º C. Verificou-se que quanto maior a temperatura maior a taxa de secagem. Os resultados para taninos sugerem que a secagem beneficia a extração dos mesmos e que o maior rendimento foi obtido na temperatura de 70° C.
