The objective of this work was to evaluate the production, yield and biometry of non - pungent (sweet) pepper fruits cultivated in a protected environment through pruning of stem stems and fruit thinning. The plots were composed of steerage systems (without pruning and pruning) and thinning (without thinning and thinning of the fruits). The experiment was carried out in a protected environment and design was randomized blocks in a 2x2 factorial scheme. Fruits of four plants of each plot were evaluated during eight harvests. Pruning promoted an increase in the mean mass of the total fruits, average commercial fruit mass, number of commercial fruits, length, diameter, C/D ratio, total soluble solids, pH and total titratable acidity of pepper fruits. The thinning promoted increase only for the length and average diameter of the pepper fruits. Therefore, it is recommended to prune the stems of the pepper plants to acquire higher values of average mass and fruit diameter.
